About the Recipe

Make the best broccoli and cheese soup of your life at home in 1 hour! Beyond words amazing and WAY better than Panera! It’s an easy soup to make and it's an absolutely perfect comfort food (making this first chilly
weekend the perfect weekend for it)! We love broccoli and use plenty because we prefer big chunks of broccoli in every bite, however less can be used. We also like to use some stalks to make use of the entire head and not waste any, but you can use florets only if preferred. Even people who ‘don’t like broccoli’ should love broccoli when it’s bathed in a
creamy, cheesy broth atop a Lycoming Bakery Bread Bowl.

About the Soup Recipe

This creamy soup is a cozy blend of corn, chicken, veggies, spice, cheese, and tortellini in a thin creamy broth. Creamy Chicken Cornellini Soup is quick and easy to make, yet
offers SO MUCH wow-factor, your family will ask for it again and again. Easily switch this recipe to slow cooker by simply sauteeing the veggies on the stove top first. Then
you can slow cook the rest of the ingredients (without the pasta) for 3-4 hours on high or 6-8 on low. Add the past 30 minute before serving.

About the Smithy's Pulled Pork Recipe

The pulled pork comes from 12-14 hour slow hickory smoked pork butts that are then hand pulled apart. In addition to the pulled pork you will also receive a container of his pepper
slaw (made with our own homegrown cabbage and green bell peppers.) To top off your sandwich, each kit will include BOTH of Smitty's famous sauces: a vinegar based
Carolina sauce & a thick, rich bbq sauce. Four Lycoming Bakery rolls are also included in each kit. With the included rolls - you can make four half pound BBQ sandwiches,
which is a HUGE sandwich. Depending on the amount of BBQ you desire on each sandwich, will determine how many sandwiches you can get from each kit. With that in
mind, additional rolls are available for purchase at the time of pick up. This creamy soup is a cozy blend of corn, chicken, veggies`

About the Recipe

This soup is basically witchcraft. We put plants, spices, & dead animals into a cauldron & follow the instructions from a book written by old people. In honor of this logic, we knew we
couldn't let this Souper Saturday Halloween Edition pass by without paying tribute to the witches and offering up this wickedly good soup. You can make this spooky witches brew
stew for a fun festive meal. It's made with sausage, beef and Halloween inspired veggies cutouts: skull mushrooms and pumpkin carrots! This recipe tastes like an ultra jazzed-up
hamburger soup and was so much fun to make! The different shapes were really neat to do but certainly not essential to the flavor of the soup. You don't have to go all *Pinterest Mom* with it and do the shapes. Try it this Halloween along with garlic bread and topped with parmesan or mozzarella cheese.

Mable Jane’s Roasted Butternut Squash Soup

October 29nd, 2022

Butternut Squash Soup
Included Ingredients
  • 1 Large 3lb. Homegrown Butternut Squash

  • Shallot

  • Homegrown Garlic

  • Homegrown, Fresh pulled Ginger Root

Needed Ingredients
  • Salt and Pepper

  • Olive Oil

  • Maple Syrup

  • 3-4 Cups Vegetable/Chicken Broth

  • 1-2 Tablespoons of Butter (to taste)

  • Heavy Cream to Taste (optional)

  • Cayenne Pepper (optional to taste)

About the Recipe

Butternut squash and cool weather go together like they were made for each other—which, really, they were. On a brisk day, there’s nothing more soothing than chopping and simmering vegetables over a warm stove. As you cook, the kitchen fills with the delicious scent of butternut squash, and when you’re finished, steaming bowls of butternut squash
soup (that will last all week!) reward you for your work, so let’s cozy up with a bowl creamy butternut squash soup. The ingredients list is simple so the squash flavor can shine
through, but the end result offers exceptionally rich flavor. A little bit of butter rounds out the flavor and makes it truly irresistible, without weighing down the soup like heavy cream tends to do. Most of this soup’s flavor comes from the cooking method, which starts with roasting the butternut squash to bring out its caramelized best. Bonus! That means
you don’t have to peel and chop the squash. If you’re planning to make this soup for company, you can serve the soup straight from your blender. Or, make it the day
before and reheat it in your blender or in a pot on the stove. In fact, it tastes even better the next day. Butternut Squash Soup is basically fall in a bowl.

Local Business Partners
  • Tony's Deli

About the Recipe

We couldn't let soup season slip by without one more nod to sweet corn. This recipe for corn chowder is one of many that we keep on hand and the flavor is incredible. It’s creamy, but not too rich. It has a remarkable flavor profile with just the right hint of smokiness coming from the smoked paprika. Every single ingredient pairs perfectly with the others, from the bacon and chicken to the veggies and spices. It’s extremely satisfying without feeling too heavy. This soup’s outrageous flavor comes from a roux built on butter and bacon grease, and let me tell you, that bacon makes ALL. THE. DIFFERENCE! Seriously, you can’t get better flavor than this in soup.

  • What is a market box?
Market boxes were started in 2021 and have quite quickly rocketed to our most popular offering. The idea came to us during our greenhouse season. We all love greenhouse season because it is ever changing and evolving with ideas. Produce season is one that we all dreaded because of the monotony. There wasn’t anything to break up the weeks, they just seemed to drag on week after week.We set out on a mission to come up with something that engaged us, increased business, and excited our customers - they've done exactly what they were intended to by quickly rocketing to our most sought after offering. At the core of the market box there is local fresh produce, but we knew it needed to be more than that to be innovative. It needed to be exciting for the customer - not a box of tomatoes and corn and that’s where the format was born. Because we have been in the produce career for 75 years, our family has more than enough “loved” fresh produce recipes to go around. We have always said: “If people only knew how to prepare these things - they’d go crazy over them.” So we started sharing some of our loved recipes including: Bruschetta, Tomato and Corn Salad, Peach Cobbler, Fresh Pasta Primavera, Roasted Sweet Corn, and more. So each week we decided to focus on a theme and include a recipe to match with as many of the produce ingredients as we can source or grow. For example last year we did a brunch themed box with Grandma's Corn Fritter and Maple Syrup recipe;, a BLT market box with Robin's Fresh Corn and Tomato Salad, A "Cinco De Augusto" box with Juju's Fresh Salsa Recipe; an It's Fall, Ya'll box with John's Beloved Reuben Recipe, and many others! The contents of the box are different every week. Once we knew we wanted to implement the recipe, we knew that our business couldn’t provide some of the ingredients. Thats where the idea of including other small businesses in the area came from. We are firm believers in small businesses being the lifeline of the economy. You will never meet more proud, hardworking people that than the people behind a small business. We wanted this to be such a crucial part of the market box. We not only wanted to support the businesses, but we wanted our customers to support these businesses. We have worked with so many local small businesses including: Tony’s Deli (In almost every box!) , Lycoming Bakery (in almost every box!), Broad Street Breads, Real Taste Food Trucks, Waltz Creamery & Farm House Cafe, KC Kettle Corn, Nittany valley Creamery, We Sister’s Bakery, Hillside Catering, Di Rosco Arrostocini Fresh Pastas, Deb’s In A Jam, Sprinkled Sweet, Wegmans, Mr. Sticky’s, Grigg’s Coffee, Kathy’s Cafe, Batter Up Bakery, Shady Side Maple Syrup, Teamwork Graphics, Miles Welby Candles, Dippedtastic Treats, Landon’s Apple Cider, Wagner’s Wasted Whoopies, Maseto’s Deli, Lotus Blossom Letters, Grain and Gold, Milkhouse Creamery, Gunzey’s Hot Sausage, Susquehanna Mills, Papa Dave’s Cotton Candy, Helmrich’s Seafood, Green Bee Farm, Barrel 135, Predoni’s, Celebrations Bakery & Cafe, The South Side Pizzeria and Restaurant, Tag’s Foods, Eder’s Ice Cream, Bullfrog Brewery, DiSalvos, and I’m sure there’s more with hopefully more to add to the list in the future! Another item in almost every market box is something we call "Weird and Unusual Produce." We know there are SO MANY vegetables and fruits that are locally grown that people have never heard of - or are too intimidated to try. We came up with including a “weird & unusual” item in each box. That has been so fun to come up with each week. Some, not all, that we have included are: Yellow & Orange Watermelon, Fairytale Eggplants, Fresh Okra, Yum-Yum Peppers, Black heirloom tomatoes, Chocolate Covered Cherry Peppers, Patty-pan squash, Kohlrabi, donut peaches, Italian Prune Plums, and lots more. Because it's included as an item is in the box, most people will try it or prepare it in the suggested way and they end up loving it! Yellow watermelon has been one of the most popular, people now request that more often than red watermelon!
  • What is the price of a market box?
The cost is entirely dependent on the contents. They may range from $65-$95 each depending on that week's theme. They are put together with a family of 4-5 people in mind. We also offer a "half size" box, some weeks, with the idea of a 2 person household ordering one. They include the recipe and contents to make about half the amount of the full size box. They also might not contain all the "extra" items we include in the full size box. The half size box is usually about $45-$60 depending.
  • How do I get a market box?
You must be subscribed to our mailing list. You can do so by going to www.tebbsfarms.com/subscribe and entering in the required information. Once you are subscribed you'll recieve the email EACH WEDNESDAY MORNING at 8:00 am, during market box season. The email will detail the contents of the box and the cost. The only way to order that week's box is to REPLY to that email. We reply back with a confirmation number and you're good to go. You will then pick up the next day, THURSDAYS of the week, using that confirmation number given to you in our reply back email. Payment is due upon pick up. If you order one and fail to pick your box up the next day, you will no longer be able to order market boxes with us. We only do so many each week and we often have to tell people who try to order that they are sold out by the afternoon. That means two things: ORDER EARLY (Meaning as soon as you get the email at 8:00 am) and IF WE HOLD ONE FOR YOU - YOU'RE TAKING THE SPOT OF ONE OF OUR ACCOUNTED FOR BOXES.
  • I see you work with other local businesses, how does that work and what does it mean?
At Tebbs Farms we believe small business is the lifeline of the economy. These businesses are owned and run by people in your community. That means their profits go back into your LOCAL ECONOMY to build it up, provide jobs, and make it a spectacular living area. SUPPORT THEM! We would never ask you to do something we don't do - so we are doing just that, supporting our friends. For example: In the Brunch basket last year we did a Sticky Bun from Mr. Sticky's, Fresh Squeezed Orange Juice from Kathy's Cafe, Eggs from a local chicken farm, Whole Milk from @nittany Valley Creamery, Coffee from Griggs Coffee, Muffins from Batter-Up Bakery, Lean Bacon and Breakfast Sausage from Tony's Delicatessen & Fresh Meats, and a Tebbs T-shirt from Teamwork Graphics. That was just ONE basket! Last year we worked with several others including: Maseto's, Di Rosco Arrosticini, Lycoming Bakery, Lotus Blossom Watercolors and Lettering, Miles Welby A Candle Co., The Hillside Catering, Sprinkled Sweet, Wegmans, @InAJam, Kc Kettle Corn, We Sister's Bakery, Waltz Creamery & Farm House Cafe', @Real Taste Taqueria, and Broad Street Breads.
  • How often do you do market boxes?
We offer market boxes during peak produce months in the summer with the occasional additional offerings during the fall and holidays. Our market box season in 2023 will start with the first one being Thursday July 27 followed by: August 3, August 10, August 17, August 24, and August 31. Our special boxes do not have a specific calendar date and become available when the idea comes to us. As long as you are subscribed, you'll get all the information about them in plenty of time to order.
  • How much time do I have to purchase a market box?
During market box season, the email will go to our subscribers inbox by 8:00 am on Wednesday mornings. Generally, market baskets get claimed quickly usually by around noon! It is best to reply to that as promptly as possible, ensuring your on the list for one. We only do a set number of boxes each week and once the spots are all filled - they are SOLD OUT.
